A spuma, or espuma, is a dense foam with small bubbles, similar to a whipped cream in consistency, but often more savory in flavor. Typically made with a whipped cream dispenser with an N20 cartridge, we’ve put together this alternative recipe that is easy to make with equipment you likely have in your kitchen! This recipe makes one cup, and leftovers can be stored in the fridge for up to two days. Do not freeze.
To make the coffeetail version of the Caffe Emiliano, swap the cherry syrup for Alchermes, an Italian red liqueur. Please drink responsibly.
