This recipe was created as a result of a coffee cocktail competition among students at the Florida International University Chaplin School of Hospitality & Tourism Management. Congratulations to the winning student, Myanh Vo. Myanh is currently a graduate student at the Champlin School of Hospitality and Tourism Management, studying her passion for food and beverage. 

INGREDIENTS:

  • 2oz Angels Envy Bourbon (port cask finish)
  • 1oz jackfruit simple syrup
  • 2 dashes toasted almond bitters
  • 1oz espresso
  • 3 TBSP crushed white rice
  • 8oz unsweetened coconut milk
  • 2oz sweetened condensed milk
  • pinch of salt
  • 1/4-1/2TSP ube extract
  • 2 cans of jackfruit pulp in syrup
  • 1 cup white sugar,
  • 1/2 cup of jackfruit canned liquid
  • 1/2 cup of water
  • 3TBSP of jackfruit extract

For the Garnish:

1. 3 jackfruit stars on a pick

Ube Foam (made in ISI canister):

  • 8oz unsweetened coconut milk
  • 2oz sweetened condensed milk
  • pinch of salt
  • 1/4-1/2TSP ube extract
    1. Combine all ingredients in canister and charge with N2O charger.

 

Jackfruit simple syrup:

  1. Grab both cans of canned jackfruit ensure it has fruit and syrup in the can)
  2. Strain the amount of liquid needed from cans, and set aside jackfruit pulp and remaining liquid for garnish
  3. To a saucepan add
      a. 1 cup white sugar,
      b. 1/2 cup of jackfruit canned liquid
      c. 1/2 cup of water
      d. 3TBSP of jackfruit extract
  4. bring to boil and let simmer for about 5-10 minutes till it gets slightly thick, take off heat to cool

 

Jackfruit star garnish:

  1. Take reserved jackfruit, and 1/2 cup of the reserved can syrup & blend
  2. Spread flat and dehydrate @180°F for 12-15 hours
      a. about halfway through, use a mini star cookie cutter to make out the stars- this makes it easier to remove when finished dehydrating
  3. Use melted sugar and water mixture to attach 3 stars to each pick

Preparation:

Step 1: Begin pulling your double espresso shot

Step 2: Measure your Bourbon, jackfruit simple syrup, espresso, and crushed rice into your mixing glass, add your bitters last. Do not add ice yet

Step 3: Dry stir your ingredients to begin rice washing the drink

Step 4: Add ice to your mixing glass and a large rock to your rocks glass and fully stir your ingredients for 40 seconds

Step 5: Strain cocktail over the large rock

Step 6: Fill the rest of the glass with Ube foam

Step 7: Garnish with dehydrated jackfruit star pick
