Iced Tiramisu

Ingredients:

  • Ice Cubes
  • 60ml chocolate syrup
  • 60ml/double shot of espresso
  • 200ml cold brew or a double shot of espresso (we recommend Super Crema)
  • 70g whipped cream or mascarpone spuma
  • Cocoa powder, for garnish

Equipment:

  • Tall glass

Procedure:

  1. Place the ice cubes in the glass.
  2. Pour the chocolate syrup over the ice.
  3. Pour the cold brew or espresso into the glass.
  4. Top with cream.
  5. Sprinkle with cocoa powder.

Serve it Hot

Ingredients:

  • 30ml chocolate syrup
  • 60ml/double shot of espresso (we recommend Super Crema)
  • 200ml hot water
  • 60g whipped cream or mascarpone spuma (see recipe below)
  • Cocoa powder, for garnish
  • 1 Ladyfinger, optional for accompaniment

Equipment:

  • Mug or heatproof glass

Procedure:

  1. Pour the chocolate syrup into the mug.
  2. Add hot water.
  3. Brew the double espresso and pour to combine with the hot water and syrup.
  4. Top with cream.
  5. Sprinkle with cocoa powder.
  6. Serve with a ladyfinger if desired, and enjoy!

Mascarpone Spuma

A spuma, or espuma, is a dense foam with small bubbles, similar to a whipped cream in consistency, but often more savory in flavor. Typically made with a whipped cream dispenser with an N20 cartridge, we’ve put together this alternative recipe that is easy to make with equipment you likely have in your kitchen! This recipe makes one cup, and leftovers can be stored in the fridge for up to two days. Do not freeze.

Ingredients:

  • ½ cup cold heavy cream
  • ¼ cup powdered sugar
  • ½ cup + 1 tablespoon mascarpone (at room temperature)
  • ½ teaspoon vanilla
  • Pinch of salt

Equipment:

  • Immersion Blender or Hand Mixer
  • 2 Mixing Bowls
  • Whisk

Instructions:

  1. Pour the cream and sugar into a bowl and beat until very thick peaks form.
  2. In a separate bowl, with the same beaters, add the mascarpone and vanilla and mix until creamy.
  3. Fold the cream into the mascarpone gently, then whisk to combine.

Procedure:

  1. Put the powder into a bowl
  2. Pour the milk on the powder
  3. Mix with a whisk and pour 500 gr on every siphon
  4. Load up the siphon with 1 N2O cartridge 
  5. Shake and store in the fridge
  6. When needed, shake upside down and pour over the beverage
